Kate’s Homemade Applesauce with Cinnamon Toast Crunch*
I came home the other night to the intoxicatingly autumnal aroma of fresh apples boiling on my stove. My roomie Kate made some dank applesauce!
Kateism’s Cinnamony Applesauce:
Peel, core, and chop 12 apples
Add 1/2 cup sugar
1.5 teaspoons of ground cinnamon
2 cups of water
Mix together in large pot on stove over medium-high heat, covered, for 20 minutes or unitl apples are soft. Stir occasionally. Smash with potato masher to desired consistency - Kate likes to leave it a little chunky.
*(Can I add, I think this is the perfect high brow/low brow spoon?!)
Honey Roasted Peanut Butter with Teddy Graham Topping
When it comes to peanut butter, I like it all: the trashy JIF, the organic stuff, chunky, smooth, whatever. But Whole Foods’ grind-your-own, honey roasted truly is the best PB in the world. In the WORLD. And look at those lil’ guys, swimming in a mini PB pool…swimming right into my mouthy.
Greek Spoon: Tomato, Feta, Tzatziki
I had something of an unconventional Labor Day BBQ last night, We had some staples, sure: burgers, cole slaw…but also some Greek mainstays like skewers and tzatziki. Recipe to follow!
Julia’s Tzatziki:
1 c. non-fat Greek yogurt
spoonful of Dillweed — I didn’t have fresh dill :(
1 cucumber, peeled, seeded and diced
spoonful red pepper flakes
juice of 1/2 a lemon
Salt and pepper to taste
Combine all in food processor until creamy and enjoy with delish skewers (or on its own).
